Virginia’s Chocolate Mayonnaise Cake

  • 2 cups flour
  • 1 cup sugar
  • 1-1/2 teaspoons baking soda
  • 1-1/2 teaspoons baking powder
  • 4 tablespoons cocoa
  • 1 cup water
  • 1 cup Miracle Whip

Preheat oven to 350°F. Mix flour, sugar, baking soda and baking powder. Then add water and Miracle Whip. Rub 9 inch-square baking pan lightly with butter or oil. Sprinkle about a tablespoon of flour into the pan shaking it around until the bottom and sides of the pan are covered. This will prevent the cake from sticking. Pour batter into baking pan. Bake 35 minutes at 350°F.

Allen’s sister, Ollie Strickland, remembered eating this cake at Allen and Virginia’s house. It was wonderfully moist and dark with chocolate. Goldie Purcell, Virginia’s sister, found the recipe.

Chocolate Frosting

  • 1/2 cup cocoa
  • 6 tablespoons soft butter
  • 2-2/3 cups powdered sugar
  • 1/3 cup milk
  • 1 teaspoon vanilla flavoring


Beat butter in a bowl until it is soft and creamy. Add vanilla. Add 1/3 of the powdered sugar, cocoa and milk. Beat. Repeat until all have been added. Beat until the frosting is the right consistency to spread. A little more milk can be added if needed.
