Heat a skillet with oil over medium to high heat. Make sausage into patties. Place in skillet. Let brown on one side. Turn, mash down and brown on second side. Pork should be thoroughly cooked. Drain on paper towels. Strain and save the sausage grease for making gravy, biscuits, and other dishes.
Make gravy in the pan where sausage or ham was fried. Use grease in which the meat was fried supplementing it as required. Leave pieces of meat stuck on the skillet in the gravy. Follow gravy recipe.
