Beans and potatoes. Cornbread and beans. The combinations are near endless. In our childhood we ate them nearly every day. Day in and day out. When we were lucky we had ham to cook with the beans. Part of the year we had cabbage, green onions and green beans from the garden. We bought dried pinto beans and cornmeal for pennies in huge bags at the grocery. We canned cabbage and green beans. In the barn we stored the potatoes and onions that we grew in hopes that they would last all winter. Digging potatoes, especially sweet potatoes, was a dirty job usually done mostly by us kids. You could tell which kids had been digging sweet potatoes at school because their hands were stained.
Beans potatoes, cornbread, cabbage and onions may have been a bit repetitive, but they were delicious and nutritious.
